Earlier this January I went on short and sweet girls trip to Fort Lauderdale with my mom, sister and sister in law. It was a fun little getaway that was a much needed escape from the harsh Michigan cold. I needed warm air on my face and some blue sky desperately. The weather was too windy for beach lounging almost every day so we ended up shopping or just hanging out for the three days we were there.
One of our shopping trips took us to Miami where we walked around and enjoyed scenery. We didn’t spot any celebs (bummer) but we did have a fantastic late lunch / early dinner on the beach at Malibu Farms. I don’t know what they marinated that steak in but we started with the steak nachos and omg they were gone within two seconds. My sister in law and I split the avocado pizza and I knew instantly I had to figure out how to recreate it. Note for next time I am going to make a homemade crust so it’s a little crispier but this was a fantastic lunch at home on a snowy day.
After we finished our lunch we hung out enjoying the fantastic people watching and view of the ocean from our table. We went for a beach walk and rein-acted bay watch which to anyone watching must have thought we were insane. But hey, influencers in the wild am I right?
I am counting down the days to when I can enjoy this pizza on my patio this summer because it would be so refreshing on a hot day. Aside from the crust, it’s relatively no bake. I normally make my own pizza crust but I was lazy and used a trader joe’s store bought one. I think that it was a little too puffy for my taste and next time will go for a more cracker like consistency.
You can make the ricotta sauce ahead of time but I would wait until you are ready to serve to slice and place the avocado. Top it with a bit of red pepper flake and honey and it is the perfect combo of sweet and heat.
- 1 pizza crust, baked as crisp as you like
- 8oz of fresh ricotta
- 1/3 cup of chopped, packed cilantro
- 1 full chopped jalapeno. Seeds and stems removed. Plus more if you want to add some more heat at the end (optional)
- 1 large avocado
- pinch of red pepper flakes
- 1 tbsp of honey
- 1 tsp of salt
- juice from one lime
- Pre bake the crust according to directions and let cool. While it is cooling, in a large bowl mix up ricotta, cilantro, jalapeno, and salt.
- Spread ricotta mix on cooled pizza crust, you do not want this to melt.
- Thinly slice your avocado and arrange to cover the entire pizza. I did mine in a wheel because I thought it looked pretty.
- In a small bowl whisk together honey and red pepper flakes, drizzle over the pizza.
- Squeeze a lime over the top and serve.
